I’m surprised you didn’t mention a hotel in Aix (not Aix-en-Provence, which is a completely different place), France. I don’t remember its name, but it’s constructed up a large rock that has a castle and cactus park on the summit. The sides of the rock are almost vertical, with a little pedestrian path winding up it. The hotel rooms are perched on individual crevices and ledges. The reception is at the base of the rock by the car park, and if you need a porter to carry your bags, he will load them onto a donkey!
